Lauren Errickson, M.S., has an academic and professional background that includes environmental, agricultural, and nutritional science experience. Having previously co-owned/operated a horse-powered vegetable farm in New England, she now coordinates the New Brunswick Community Farmers Market with Rutgers Cooperative Extension. Through the market, Lauren works to increase food availability and affordability within the city, bringing Jersey Fresh produce from local farms to urban families while also fostering urban agriculture initiatives and community gardens. She serves on the advisory board of Rutgers Against Hunger and as co-chair of the Agriculture Work Group of the New Brunswick Community Food Alliance. Lauren is a Ph.D. Candidate in the Nutritional Sciences graduate program at Rutgers University; her research goals focus on the interconnections of nutrition, health, and sustainable food systems.
